I’m Feeling A Burrito Night

I know we’ve all had at least one Burrito in our lives, whether homemade or at a restaurant. But, I feel like they should be a more regular thing so I’m going to give you the basic recipe, and then you whatever ingredients you want to it.

 

Ingredients:

  1. Beef Mince: Beef Mince is a popular meat filling for burritos, though it’s certainly not the only meat you can use in your filling. You can try adding chicken, pork, lamb, or even choose to go vegan/vegetarian for this meal.
  2. Taco seasoning: A burrito is only as good as its seasoning. You can use your favorite taco seasoning or any other seasonings that are to your liking to flavor the meat.
  3. Refried beans: Refried beans help add moisture and bind the meat filling with melted cheese. Canned refried beans are an easy, affordable and convenient option, you simply drain them and throw them in the pan. You can also opt to turning them into a paste. Or leave them out completely if it’s not your thing.
  4. Tortillas: For burritos, you’ll want to use your favorite brand of flour tortillas or make homemade tortillas. You can have them a little browned up or plain, whatever is to your liking.
  5. Cheese: You can use any blend of cheeses you enjoy. Whether it’s Gouda, Cheddar, Blue Cheese, Parmesan, or even Mozzarella (though the last few might be too much)

 

Directions:

  1. In a large pan, cook the mince over medium heat until no longer pink. Drain to remove the excess oil, then stir in the taco seasoning or seasoning of your choice. Remove the mince from the pan, and set aside.
  2. In a small saucepan, cook the refried beans over medium-low heat until heated through, two to three minutes.
  3. Spoon about 1/3 cup refried beans off-center on each tortilla. Top each with 1/4 cup mince. Sprinkle evenly with cheese. Then, fold the sides and ends of the tortilla over the filling. Roll the tortilla over the filling until sealed. NOTE: You can gently warm the tortillas before you begin assembling the burritos. This makes them pliable, so they’re less likely to rip or tear when wrapping them around the filling.
  4. In the same pan you used to cook the beef, brown the burritos in oil on all sides over medium-high heat. Transfer to a plate, and serve warm with sour cream and salsa, or the toppings of your choice.

 

Extras:

You can add or change any of the ingredients like:

  • Rice
  • Chicken/Pork/Lamb, etc.
  • Veggies (lettuce, tomatoes, gherkins, etc)
  • GUACAMOLE!!!! (My personal FAVE)
