Simple Salmon Dinner

Cooking salmon with the skin on not only makes it more delicious, it also adds omega-3 fatty acids, which have quite a few health benefits. Omega-3s reduce inflammation, which reduces your risk of heart disease and many other diseases.  Doctors recommend 2 servings of fatty fish, like salmon, a week.  For more information on the health benefits of this kind of fat, check out this article.

Simple Salmon is a delicious, healthy weeknight dish. Pair it with roasted vegetables to complete the meal!

For St. Patricks Day: Slow Cooker Drunken Irish Stew

So I used Guinness in place of the beef broth (and a bit of red wine, too!), adding some Better than Beef Bouillon to give it a bit more beefy taste. I served this yummy stew to my mom and dad when they visited for daughter’s choir concert, and they agreed (with me) that this hearty stew is really good. So yes, this is what I’m making for our wine & food tasting event this month, along with some nice Irish bread to sop up the good juices.

Mini Sweet Potato Pizzas

The key here is to slice the sweet potato into pretty thin ribbons so they don’t take longer to cook than the rest of the toppings. I used just a regular vegetable peeler.

Serves: 4 small pizzas, customizable

Kale Frittata – A Healthy Breakfast Casserole

I finally found the perfect source to purchase eggs, lucky me! A local friend of my daughter’s riding instructor has lots of chickens and way too many eggs for her and her husband to eat all by themselves. Their chickens are spoiled with an insulated chicken house and heating lamps, so they stay cozy during cold winter nights. The animals receive excellent feed, which you can see in the color of the dark yellow egg yolk and the extremely hard shell. I am now on the weekly egg delivery list and with my very first batch I made frittata; to be specific, kale frittata with fresh Parmesan cheese and spicy pepperoni.

Chicken Broccoli Alfredo Stuffed Shells

Tip #1:  You can prep all items in advance, right up to the point of baking.  Keep covered in refrigerator until you are ready to bake. 

Tip #2:  Own a cookie scoop?  Use your cookie scoop to easily stuff your shells! 

Tip #3:  You can freeze this!  Just pre-assemble all the noodles with the filling.  Freeze stuffed noodles without the red sauce.  Then, thaw when ready to bake!

Vegetable Lo Mein

This vegetable lo mein isn’t so much a takeout dish makeover so much as just a really simple, versatile noodle dish that can be a staple vegetarian meal or a go-to meatless Monday dinner. It’s healthy, tasty, and very easy to make. In China, fresh eggless hand-pulled noodles are readily available (understatement), so that’s what we used, but you can feel free to use packaged fresh white noodles or the lo mein egg noodles from the Asian grocery store. You can even sub in dried spaghetti if you have nothing else!

Metabolism Boosting 20-Minute Tomato-Basil Grilled Fish Foil Packets

In the summer, my go-to meals are always foil packets cooked on the grill.

The possibilities are endless. Just take whatever fresh, in-season ingredients you have on hand, toss them into foil packets, and let the grill work its magic, deliciously melding and blending basic ingredients into very flavorful bites.

Chicken Avocado Burger

Now you can eat these even if your not a Paleontologist….or whatever, because they are really really good with an almost creamy texture.  I use bread crumbs (because I still dip my toe in the carb world) but almond meal works as a great binder as well.  Don’t skip the garlic if you can help it and be generous with the salt and pepper.  Grill on a stove top pan or on an outdoor bbq but be quick about it.  3-4 minutes on each side will do ya.

You can sub ground turkey but I’ve like the chicken a lot better and find a firm but ripe avocado so the chunks don’t get all mushy and stuff.

Tuna Salad Wraps

Serving tuna salad on fresh spinach leaves and adding broccoli was the creative genius of Jill from Simple Daily Recipes. I love my tuna salad with chopped red onion and a little red wine vinegar. The addition of vegetables makes this healthy and filling. This is an easy low point lunch recipe!

Chicken and Avocado Burritos

Today I have some tasty chicken and avocado burritos for you! They are so easy to make, you simply wrap the chicken, avocado, cheese, salsa verde, sour cream and cilantro up in a tortilla, grill it and enjoy! Just make sure to put the cheese on the top or bottom of the burrito so that is melts and gets all nice and ooey and gooey when it's grilled. Feel free to serve these burritos with extra salsa and sour cream for dipping! These burritos don't take long to make, they are nice and portable, filling and most importantly, packed full of flavour!

Christmas Tree Pull-Apart

Christmas is almost here, and I’ve got one more treat that I just had to share. This adorable Christmas tree is a quick and easy appetizer that everyone will love and takes just minutes to make. I used Pillsbury pizza crust, cut in equal squares to make the bread. For my tree, I used the Pillsbury’s artisan crust to make it a little more healthy. But you can also just use the regular pizza dough, or even homemade pizza dough.

Honey-Baked Chicken

Honey Baked Chicken Recipe

6 chicken fryer pieces
1/3 cup margarine, melted
1/3 cup honey
2 Tbsp. prepared mustard
1 tsp. salt

Arrange chicken in a baking dish with the skin side up. Combine the rest of the ingredients and pour over chicken. Bake at 350 degrees for 1 hour and 15 minutes, basting every 15 minutes (until chicken is tender and brown). Serve with rice. Serves 4-6.

Romanian/Russian Salata de Beouf

Salata de Boeuf, literally "beef salad" is a traditional Romanian potato salad that sounds French but is actually of Russian origin, where is it known as Salad Olivier(Salat Olivjke). It was invented in the 1860s by Belgian chef Lucien Olivier who worked at the Hermitage museum in Russia. Originally made with beef, it is now made with whatever one has on hand -- chicken, turkey, ham, even hot dogs and the recipe varies from family to family and region to region.

Alfredo sauce is certainly not one of those “clean-eating” New Years type dish, but with all this broccoli, it all balances out, right?

I should also mention that this is certainly not one of those heavy alfredo sauces either – it’s a light sauce with a thin coating because that’s really all you need here.

There’s just no need to add in those extra calories, especially when it’s only the first week of January!

Cream of Tomato Soup with Roasted Tomato and Gorgonzola Bruschetta

This truly is my favourite soup of all time, so much so that I’ve been making it for years! In an attempt to shoot a stylish take on “soup and bread”, I served this soup with garlicky bruschetta topped with gooey gorgonzola and slow roasted assorted baby tomatoes. I think I achieved the “yum, I need to eat you now factor”, yes? If you’re not a fan of gorgonzola, replace with mozzarella, creamy goat’s cheese or Fairview’s Cambozola. What I love about this soup is that it’s easy with no faffing involved. It’s thick, rich and creamy with just the right amount of sweet and tartness. Try this combo and let me know what you think.

With crispy potato all the way round, gorgeous tender meat and veg in the middle, and the best gravy to pour over your portion, this is incredible

French toast roll-ups

French toast roll-ups have hot, gooey fillings stuffed into the middle of them with golden-brown, buttery outsides coated in a sweet, crunchy cinnamon sugar that all but melts in your mouth.

To make the roll-ups the crusts get trimmed from sandwich bread then the slices are flattened out with a rolling pin. The flattened bread is then rolled with the filling of your choice and cooked in a buttery skillet just like regular french toast.

A generous dusting of cinnamon sugar, one of the best things on earth, finishes them and you can dunk them in maple syrup or eat them as is. They’re also good eaten at room temperature.

The filling consists of anything your little heart desires! I used peanut butter & jelly, cream cheese & jelly, plain peanut butter and plain cream cheese.

You can use a nut butter, nutella, marshmallow fluff, dulce de leche, cajeta and/or whatever else you can think of! There are no rules and the recipe is really more method than precision.

They remind me of those french toast sticks that were all the rage a while back. Only more special.

Sinfully Easy Chocolate Croissant Recipe

These mini croissants are sinfully easy to make. We use a store-bought puff pastry sheet instead of making our own croissant dough at home. The puff pastry sheet needs to be thawed before using. So, either place into the refrigerator and leave overnight or remove and thaw at room temperature for 40 to 50 minutes. Once the puff pastry has thawed, all you need is 30 minutes to make the croissants. Leave them plain, add chocolate or another favorite filling. These are mini croissants, so when making, assume each person will eat two.
