Slowly but surely, it seems like winter is making its way - and few things are more important than getting your healthy vegetable "Soup on", once winter is here in full force.

Easy Italian Chicken Bake

This recipe only has 4 ingredients if you can believe it!  The prep is so minimal it almost feels like cheating.  and then the taste… well, you will just have to take my word for it.  Savor every bite!

To make this takes minutes.  Trim your chicken breast and lay them in a glass baking dish.  Spread about 1-2 tablespoons of prepared pesto (I like the Kirkland brand at Costco, but it all works!) Slice 1-2 roma tomatoes into 1/2″ thick slices and lay them on top of the pesto.  Sprinkle mozzarella (or Italian blend cheese) over the whole thing.  I like to use the Frigo mozzarella and just grate a bit for the top, but to make it even easier just use pregrated.  Bake at 400˚F for 30-40 minutes or until the chicken is cooked through and the juices run clear.

Classic Chicken Schnitzel

Who needs an easy and delicious dinner idea? Well, today is your lucky day! Schnitzel is one of those dishes that for some reason always seemed intimidating to me… until I made it.  Now, it is a staple at our house! This easy chicken schnitzel recipe totally fills my comfort food craving every time! In the summer months I pair it with fresh veggies or cut it into strips on a salad, and in the winter it’s great with corn and mashed potatoes! Either way, it’s a winner!

Sausage, Peppers, and Mushrooms Low-Carb Cheesy Bake

Sausage, Peppers, and Mushrooms Low-Carb Cheesy Bake is easy and delicious for a quick dinner and this tasty casserole is gluten-free if you pick the right sausage!

I first made this Sausage, Peppers, and Mushrooms Low-Carb Cheesy Bake last year during January when lots of people are wanting more carb-conscious meals.  It took a couple of tries to get the combination of ingredients and photos I was satisfied with, and I didn't get the keeper version until February.

Baked Garlic Parmesan Chicken

Baked Garlic Parmesan Chicken is one of those everyone-should-know-how-to-make recipes. It’s easy and comes together quickly. In fact, it’s hard to mess up!

What to cook when You don’t have time to cook ? You know the feeling when you get home after a long day, it can be really hard to figure out how to cook healthy meals when you still have a million things to do and all you want to do is lie on the couch.

Roasted Butternut Squash Soup

I designed this traditional butternut soup to complement typical Thanksgiving fare, like green beans and mashed potatoes. (My other butternut squash soup’s Thai curry spin doesn’t play nicely with turkey.)

This version would also be a great accompaniment to grilled cheese sandwiches and salads through the end of winter. Basically, if you ever get a hankering for homemade butternut squash soup, this is the recipe for you.

I kept the ingredients list simple so the squash flavor can shine through, but the end result offers exceptionally rich flavor. All you’ll need is butternut squash, olive oil, shallot, garlic, vegetable broth, maple syrup and nutmeg.

Fritata Caprese

A four-egg frittata is great for two people, a fast and easy lunch or light dinner that needs nothing more than a simple green salad alongside. Here the flavours are inspired by the components of a Caprese salad – tomatoes, mozzarella and basil – as well as bonus flavours from the pesto: garlic, pine nuts and Parmesan cheese. Use fresh pesto from the deli to make life easier or, if you’re feeling industrious, make your own.

Simple Salmon Dinner

Cooking salmon with the skin on not only makes it more delicious, it also adds omega-3 fatty acids, which have quite a few health benefits. Omega-3s reduce inflammation, which reduces your risk of heart disease and many other diseases.  Doctors recommend 2 servings of fatty fish, like salmon, a week.  For more information on the health benefits of this kind of fat, check out this article.

Simple Salmon is a delicious, healthy weeknight dish. Pair it with roasted vegetables to complete the meal!

For St. Patricks Day: Slow Cooker Drunken Irish Stew

So I used Guinness in place of the beef broth (and a bit of red wine, too!), adding some Better than Beef Bouillon to give it a bit more beefy taste. I served this yummy stew to my mom and dad when they visited for daughter’s choir concert, and they agreed (with me) that this hearty stew is really good. So yes, this is what I’m making for our wine & food tasting event this month, along with some nice Irish bread to sop up the good juices.

Mini Sweet Potato Pizzas

The key here is to slice the sweet potato into pretty thin ribbons so they don’t take longer to cook than the rest of the toppings. I used just a regular vegetable peeler.

Serves: 4 small pizzas, customizable

Kale Frittata – A Healthy Breakfast Casserole

I finally found the perfect source to purchase eggs, lucky me! A local friend of my daughter’s riding instructor has lots of chickens and way too many eggs for her and her husband to eat all by themselves. Their chickens are spoiled with an insulated chicken house and heating lamps, so they stay cozy during cold winter nights. The animals receive excellent feed, which you can see in the color of the dark yellow egg yolk and the extremely hard shell. I am now on the weekly egg delivery list and with my very first batch I made frittata; to be specific, kale frittata with fresh Parmesan cheese and spicy pepperoni.

Chicken Broccoli Alfredo Stuffed Shells

Tip #1:  You can prep all items in advance, right up to the point of baking.  Keep covered in refrigerator until you are ready to bake.

Tip #2:  Own a cookie scoop?  Use your cookie scoop to easily stuff your shells!

Tip #3:  You can freeze this!  Just pre-assemble all the noodles with the filling.  Freeze stuffed noodles without the red sauce.  Then, thaw when ready to bake!

Vegetable Lo Mein

This vegetable lo mein isn’t so much a takeout dish makeover so much as just a really simple, versatile noodle dish that can be a staple vegetarian meal or a go-to meatless Monday dinner. It’s healthy, tasty, and very easy to make. In China, fresh eggless hand-pulled noodles are readily available (understatement), so that’s what we used, but you can feel free to use packaged fresh white noodles or the lo mein egg noodles from the Asian grocery store. You can even sub in dried spaghetti if you have nothing else!

Metabolism Boosting 20-Minute Tomato-Basil Grilled Fish Foil Packets

In the summer, my go-to meals are always foil packets cooked on the grill.

Beyond being quick and easy, grilled foil packets are a favorite of mine for many reasons:

The possibilities are endless. Just take whatever fresh, in-season ingredients you have on hand, toss them into foil packets, and let the grill work its magic, deliciously melding and blending basic ingredients into very flavorful bites.

Kung Pao Shrimp

Serves 2 | Prep Time: 15 Mins | Cook Time: 5 Mins

Chicken Avocado Burger

Now you can eat these even if your not a Paleontologist….or whatever, because they are really really good with an almost creamy texture.  I use bread crumbs (because I still dip my toe in the carb world) but almond meal works as a great binder as well.  Don’t skip the garlic if you can help it and be generous with the salt and pepper.  Grill on a stove top pan or on an outdoor bbq but be quick about it.  3-4 minutes on each side will do ya.

You can sub ground turkey but I’ve like the chicken a lot better and find a firm but ripe avocado so the chunks don’t get all mushy and stuff.

Tuna Salad Wraps

Serving tuna salad on fresh spinach leaves and adding broccoli was the creative genius of Jill from Simple Daily Recipes. I love my tuna salad with chopped red onion and a little red wine vinegar. The addition of vegetables makes this healthy and filling. This is an easy low point lunch recipe!

Chicken and Avocado Burritos

Today I have some tasty chicken and avocado burritos for you! They are so easy to make, you simply wrap the chicken, avocado, cheese, salsa verde, sour cream and cilantro up in a tortilla, grill it and enjoy! Just make sure to put the cheese on the top or bottom of the burrito so that is melts and gets all nice and ooey and gooey when it's grilled. Feel free to serve these burritos with extra salsa and sour cream for dipping! These burritos don't take long to make, they are nice and portable, filling and most importantly, packed full of flavour!

Southern Honey Glazed Ham

Recipe for Southern Honey Glazed Ham – Succulent and full of flavor, this Homemade Honey-Glazed Ham is the perfect centerpiece to any holiday feast.

Just throw the ingredients together in a large bowl or pitcher and allow guests to serve themselves. It’s the easiest champagne cocktail you’ll ever make!

Mini Christmas Quiche

I try not to do a lot of re-posting of recipes on BTHR. Not only is it boring for you guys, but it’s a total snore for me, too. I have so many new ideas that I want to try out!

But every now and again, there is a recipe that I’ve done previously (usually from my first few months of blogging) that I think really deserves an update. The only thing that was worse than my photography skills from back then was my recipe writing. And there are certain recipes from those days that are such family favorites, I feel like I need to do them justice with a new, shiny post.

I’m looking at you, mini quiche.

Christmas Tree Pull-Apart

Christmas is almost here, and I’ve got one more treat that I just had to share. This adorable Christmas tree is a quick and easy appetizer that everyone will love and takes just minutes to make. I used Pillsbury pizza crust, cut in equal squares to make the bread. For my tree, I used the Pillsbury’s artisan crust to make it a little more healthy. But you can also just use the regular pizza dough, or even homemade pizza dough.

Spiced Pork Tenderloin with Cranberry Relish

Well before your entree ever graces the table, you will be wooed by the intoxicating smell of Spiced Pork Tenderloin with Cranberry Relish

This dish literally embodies all the scents I love about the holidays. I want to bottle it up and sell it as a candle! This recipe was developed when I was on my “1 Bag of Cranberries, 7 Recipes” research day. I wanted a way to use my fabulous Cranberry Relish on something other than a Thanksgiving turkey.

Chopped Salad with Steak

Chill plates one hour before serving to help keep the salad cold after serving.

Sweet Potato, Mushroom and Spinach Salad

Everything on this plate will make your body love you, from the iron rich spinach to the B vitamin filled mushrooms, the anti-oxidant loaded tomatoes and the antibacterial jalapeño peppers. All the ingredients are just amazing. Although it’s the sweet potatoes that get me most excited.

Italian Herb Baked Meatballs

Our family's favorite meatballs are loaded with fresh herbs and cheese. They are bursting with flavor.  You can make pasta sauce, but there is truly no need. They are the best daggum meatballs ever!

No sauce required. Simple recipe, magnificent meatballs! Last week we had my bestie over for her birthday and I made my favorite 40 Minute Quick and Easy Cheesy Meat Lasagna, It is outrageous and goes in the oven in just 15 minutes.

Vegan Shepherd's pie

“A rich, hearty filling topped with gorgeous root-veg mash and zesty breadcrumbs for a super-crisp finish makes this dish really special ”

Honey-Baked Chicken

Honey Baked Chicken Recipe

6 chicken fryer pieces
1/3 cup margarine, melted
1/3 cup honey
2 Tbsp. prepared mustard
1 tsp. salt

Arrange chicken in a baking dish with the skin side up. Combine the rest of the ingredients and pour over chicken. Bake at 350 degrees for 1 hour and 15 minutes, basting every 15 minutes (until chicken is tender and brown). Serve with rice. Serves 4-6.

Romanian/Russian Salata de Beouf

Salata de Boeuf, literally "beef salad" is a traditional Romanian potato salad that sounds French but is actually of Russian origin, where is it known as Salad Olivier(Salat Olivjke). It was invented in the 1860s by Belgian chef Lucien Olivier who worked at the Hermitage museum in Russia. Originally made with beef, it is now made with whatever one has on hand -- chicken, turkey, ham, even hot dogs and the recipe varies from family to family and region to region.

Cake
1/2 cup semisweet chocolate
1 1/4 cups butter

(Taylor Swift's Favourite) Chocolate Chunk Oatmeal Cookies

We already know TSwift is really, really good at so many things, from decorating her apartment to throwing birthday parties to ruling couples’ shots on Instragramand much more. We also happen to know that she bakes like a boss (we imagine with her supermodel BFFs Gigi Hadid and Karlie Kloss by her side!). She recently revealed that her go-to chocolate chip cookie recipe is from Food Network favorite Anne Burrell, who she tweeted at last Wednesday...

20-Minute BLT Easy Pasta Salad

Roasted Peach and Raspberry Crepes: A healthy summer desert

At our house, summertime means easy eating. We trade the braises, casseroles, and soups of winter, for fresh ingredients prepared simply. But hey, I still want dessert! Enter roast fruit. This versatile, elegant recipe can be be served as is, over ice cream, or here, as the filling for a tasty sweet crepe. Because they don’t have much sugar, these simple crepes can do double duty as a breakfast treat.

Grilled Barbecue Chicken and Vegetables in Foil

Tender, flavorful chicken covered in sweet barbecue sauce and cooked on the grill inside foil packs with zucchini, bell peppers and asparagus.

Serves: Serves 4

Tortellini with Pesto Sauce

Here is a quick dinner or lunch pasta option that you can have on the table in approximately 10 minutes. That’s right just ten minutes and you can be enjoying Tortellini with Pesto Sauce. We adore all types of pestos but the traditional basil pesto is my favorite. I grow an obsessive amount of basil each year so I can make fresh pesto.

Chicken and Broccoli Alfredo

So easy, so creamy and just so simple to whip up in 30 minutes from start to finish – perfect for those busy weeknights!

Alfredo sauce is certainly not one of those “clean-eating” New Years type dish, but with all this broccoli, it all balances out, right?

I should also mention that this is certainly not one of those heavy alfredo sauces either – it’s a light sauce with a thin coating because that’s really all you need here.

There’s just no need to add in those extra calories, especially when it’s only the first week of January!
