It’s still hot enough in Namibia to have a good old braai before the winter strikes.  Whole lamb is on special at the Food Lover’s Market Summer Carnival – so you have no excuse to skip this one!  Add minted carrots and it’s a complete Sunday lunch!

The braai pie is an updated combination of ‘braai broodjies’ and veggie bake.  You can fill it with just about anything!  Chicken, bacon, pork, mince, veggies…anything you want.  I added green olives and leeks that I had in my fridge.

  • 1 tsp. (5 ml) light soy sauce

Mossie's 5 minute Fish & Veggie Bake

This dish is going to take 5 minutes of prep – really!  The rest of the work is done by your oven!  

Cooking fish in the oven has always been tricky for me.  It goes all wet and soggy, and sometimes it has that ‘ocean’ taste.  But with the potato bake there is no excess water, and the seasoning compliments the fish perfectly.

Deon's Cauli-Cottage Pie

Cauli-Cottage Pie is an alternative to the old classic, Cottage Pie. In this version, the potato is replaced with cauliflower mash. I remember that this was a student favourite at varsity because it is relatively inexpensive…now, as a parent, I have found another way to get my kids to eat cauliflower, and as a dieter, a way to prepare a tasty and cheap low-carb meal!

So I started off wanting to make a Chicken Pie but I the price of Chicken that recently went up forced me to abort! Luckily I’m a soldier who goes to war prepared and had a second recipe tucked away in my handbag, and that was Fish lasagne.

I found the lasagne sheets, grabbed a box but instantly knew that I’m going to the fridges to look for frozen pastry rolls because I knew they would be cheaper than the lasagne sheets, I was on a budget! I found them and I was right, the puff pastry cost N$ 12,00, I inconspicuously placed the box of Lasagne down and found Hake fillets in a nearby fridge.

6 wraps (ingredients):

  • 90 ml chunky peanut butter
  • 1 cup roasted peanuts, unsalted
  • 1 small butternut, peeled and grated
  • Coriander leaves or watercress (optional)

Spread wrap with peanut butter and top with grated butternut. Substitute butternut with sliced carrots if desired. Sprinkle with peanuts and coriander leaves or watercress. For a more manly filling you could add finely sliced chicken breast to the wrap.

Eggplant and Bacon Pasta

Ingredients:

  • 375g large shell pasta
  • 1 packet bacon bits/back bacon, chopped
  • 1 large eggplant, cut into 2cm cubes
  • 150g cherry tomatoes, halved
  • 1 tsp crushed garlic
  • 2 cups tomato pasta sauce
  • 1 cup pitted black olives
  • 1/2 cup chopped fresh basil leaves
  • 100g ricotta / goats cheese, crumbled

Grilled Fish Fillets with Chickpea & Avocado Salsa

Ingredients:

  • 2 ripe avocados, peeled & roughly chopped
  • 125g tin chickpeas, drained
  • 250g cherry tomatoes, roughly chopped
  • 2 fresh chillies, finely chopped
  • 1/2 cup coriander leaves, roughly chopped
  • 1 tbs lime juice
  • 2 tbs plain flour
  • Lemon zest/salt and/or spice for fish
  • 600g Hake fillets

Chicken & Sweet Potato Cottage Pie

Cottage pie is an all-time family favourite; affordable and easy to make.  But family favourites sometimes get boring.  Or the family grows up and their needs and tastes change.  You want something a little bit healthier, but with the comfort of the favourites you grew up with.

I really underestimated the chicken & sweet potato cottage pie!   It is still a quick weeknight dinner, but with a bigger bang of flavour.  This recipe can also easily feed two extra mouths.

Crying Tiger - Thai-style Beef

The interesting name of this dish instantly caught my attention, and the flavours made my taste buds pop!  The combination of fresh & cooked, and hot & cold makes this a refreshing dish that is healthy and very quick to prepare.

Malva pudding is one of those old favourites of Dutch origin, which make any cold day a warm one, especially when served with custard, ice cream or cream.

Creamy In-Law Chicken Livers

Usually when I make chicken livers, I fry them up with bacon and a spicy tomato-based sauce.  But my sister-in-law made us this creamy chicken liver dish, and it was an instant hit.

I had a few fresh mushrooms in my fridge, which I added along with a stalk of celery (not in the original recipe).  It doesn’t really alter the taste, but does give more texture.

You will notice that no salt or pepper are listed on the ingredients, but feel free to add a little bit to your taste.

Waldorf Health Wrap

So someone forgot that they had to do the blog this week… Ooops! I had to think of something to make that will fit my budget and not take up hours of my time. One of my colleagues shared this wrap with me the other day and I decided to make my own version of it. This is very healthy and a perfect meal if you are on a diet or just trying to live more healthy.

Oven-baked crumbed chicken fillets with cucumber salad

As you’ve noticed by now, I’m constantly looking for a healthy alternative, but something that is filled with flavor and feels like I am spoiling myself.

I found this recipe when I had a severe craving for schnitzel, but didn’t feel like the usual breadcrumbs and egg mixture. I tried it for the first time 2 years ago and have been hooked ever since.  

I would suggest you start off with the cucumber salad as it needs some resting and then move onto the crumbed chicken breast.

Lamb Burgers with Mint

This is a tasty and very quick recipe.  I found that leaving the mince and mint combination in the fridge for about an hour before cooking gave it a richer taste.  No other spices are needed as the herbs infuse with the meat.  The original recipe said to add sweet chilli sauce but I found the taste is lost.  Instead you could add ½ teaspoon chilli powder to add the extra kick.  

For a healthier option bake at 180 for about 30 minutes instead of frying.

Chipolata Stew with Almond & Apricot Rice

A very delicious stew that breathes new life into our way of cooking everday ingredients.  

Rice becomes a new experience, and little pork sausages aren’t just a breakfast item anymore!

You can switch the rice for couscous, still making it with stock.

OPTIONAL:  You can give the capsicum a smoky taste by drizzling it with olive oil, and putting it under your oven’s grill to char just a bit.  Let cool slightly and pull off the skins.

Turkish Red Lentil Soup (Kırmızı Mercimek Çorbası)

This soup is on nearly every menu in Turkey and it's so nutritious and delicious. Every home cook has their own variation of it - some strain it for a smoother soup, some add cumin and saffron, others don't use stock.  I find the chicken stock give it a rich taste.  It is a quick and easy weekday meal.  Great as a winter tummy warmer.

Simple Satay Chicken

The beauty of this recipe is that you can eat the chicken with noodles, rice or even bake it into a pie!  You can make the sauce only and dip grilled chicken or pork skewers into it.

Satay sauce, or peanut sauce, is typically used in cuisines of Indonesia, Thailand, China and some Middle Eastern dishes.  It is versatile, can be adjusted to different tastes.

This is a very basic recipe for Satay sauce, so be sure to taste it and adjust to your own preferences using salt, white pepper, fresh chili (I used those three), sugar, milk or lime/lemon juice.

The marinating time is not necessary, so skip it if you are in a hurry.

This recipe was passed on to me by a very good friend and it has never failed me. It can be made either on the stove top or on a warm fire in a potjie pot, either way; it always turns out great and leaves my guests scraping out the last creamy morsel.

Grain-Free Cauliflower Crust Pizza

Since the beginning of this year, I decided to change my lifestyle and start eating more natural, clean and fresh foods.  I soon came to realize that eating healthy, clean food didn’t have to be so complicated or boring as I had originally thought and I didn’t need to sacrifice taste on my journey either.  This IS the BEST cauliflower pizza crust I have ever tasted and I will probably never go back to normal pizza crusts again.  Yes, you can slice it and pick it up like a real piece of pizza and it is picky husband taste tested and approved.  
The recipe yields ± 2 large rectangular pizzas.

Franko's Braai Snoek & Sweet Potato Bake

My husband was kind enough to share his recipe for ‘braai’ snoek.  There are plenty of variations and ways to make this delicious fish, but this is the way we prefer making it.  Just a note:  use real butter, not margarine!

Sweet potato is the traditional accompaniment to braai snoek.  We don’t mash it with butter and sugar because the butter sauce for the fish is already quite sweet.  You can substitute the soup powder I used with Potato Bake, for a few dollars more.

So this week, I decided to explore the pages to find something quick and simple, and found the Little Food Lover’s Meatball Pasta! The book describes it as ‘A dish that the whole family can enjoy together. Simple enough for a child’s palate and comfort food for grown-ups.’ Yum!

“No Butter” Butter Chicken with Sambel Salad

Butter chicken or murgh makhani is a classic Punjabi recipe  from the North West of India.

Though it is an Indian dish, there is Pakistani, Nepali and Tibetan versions of the dish as well as more modern Anglo-Indian variations.

The version I have included does not include butter, but rather fat free natural yoghurt for the more health conscience.

The dish can also be adapted from mild to hot, depending on your preference.  Remember that the yoghurt neutralizes the chillies so  use green chillies for extra taste.   I also prefer to use chicken breast or thigh, still on the bone.  Serve with a sambel salad (red onion and tomato) and your choice of rice or potatoes.

Sage, Lemon & Garlic Pork with sticky roast pumpkin

Sage is a great herb, with many medicinal properties and a great taste.

It has a peppery, seasoned flavour and works well with sausage or pork.

You can make the pumpkin either in the oven under the grill, or on the stove top.

Crumbed calamari with lime & fennel dipping sauce

Food Lover's Market have introduced their very own Fresher's range of seafood. From prawns and snoek, seafood mixes and shrimps, and a variety of calamari.

I've always thought making crumbed calamari rings will take a lot of time and effort. That was not the case at all. In fact, it's so quick that you might need a second pair of hands to set the table while you take the calamari rings out of the oil! From start to finish, it takes about 30 minutes.

Falafel & chicken skewers

Jarret and I are both very fond of trying out new recipes and exploring different cuisines.  He suggested I make falafels – fried patties made from chickpeas and/or fava beans.  Falafels were first made in Egypt, but has been adopted as Israel’s national dish and has been perfected by the Greeks.

Falafels go great with chicken and are traditionally eaten in pitas or wrapped in flatbread.  I made couscous as an accompaniment, just for an easy change.

Moussaka is a Greek dish that reminds me of lasagna, just  without the pasta.  It’s rich, creamy and filling – all the things you want a family dish to be.  Servings: 6 Total Cost: N$120

We all have a staple range of familiar ingredients we stick to when cooking, and we don’t often enough venture into new territory.  The products in our cupboards are the same, month in and month out.  You can almost buy your groceries without a shopping list, because it’s the same stuff every month.

Chicken, potato & coconut curry

An easy curry that you can either made with store-bought coriander pesto, or you can make your very own in 2 minutes with things that are already in your cupboard.  If you use store bought, you will probably go over the N$120 budget, though.

Unlike most comfort soups, this one is healthy and leaves you feeling full but not heavy and bloated, like many comfort foods do.

I stumbled across this delicious lamb stew on amazingalmonds.com.au .The spices balance so well with the raisins, that even my husband (who hates raisins) said the raisins belong and work great in the dish.

Spicy sweet-potato soup with chili coriander cream

Soup doesn’t only have to be served in winter. This dish is a pleaser any time of the year, with its sweet and spicy flavours that’s not too heavy during this last bit of summer.

Cabbage-wrapped meatballs with sweet paprika & tomato sauce

On a recent trip to Hentiesbay I visited a longtime family friend, ‘tannie’ Soekie. We share a love for cooking and exploring new dishes, and during a Sunday lunch visit she told me about cabbage-wrapped meatballs. At first I thought it sounds like a typical ‘Afrikaans’ meal, but after a bit of research it turns out there are many international variations of this dish. Cabbage rolls are a staple in Croatia, and it’s seen as the ultimate comfort food in Poland.

This is my own take on it, mixing up elements of the versions from Poland, Russia, Sweden and Hungary.
