Cream of Tomato Soup with Roasted Tomato and Gorgonzola Bruschetta

This truly is my favourite soup of all time, so much so that I’ve been making it for years! In an attempt to shoot a stylish take on “soup and bread”, I served this soup with garlicky bruschetta topped with gooey gorgonzola and slow roasted assorted baby tomatoes. I think I achieved the “yum, I need to eat you now factor”, yes? If you’re not a fan of gorgonzola, replace with mozzarella, creamy goat’s cheese or Fairview’s Cambozola. What I love about this soup is that it’s easy with no faffing involved. It’s thick, rich and creamy with just the right amount of sweet and tartness. Try this combo and let me know what you think.

Keep warm!!

Herby Pork Fillet with A Strawberry & Baby Spinach Salad

With a strawberry and baby spinach salad.

Shepherd's Pie

With crispy potato all the way round, gorgeous tender meat and veg in the middle, and the best gravy to pour over your portion, this is incredible

French toast roll-ups

French toast roll-ups have hot, gooey fillings stuffed into the middle of them with golden-brown, buttery outsides coated in a sweet, crunchy cinnamon sugar that all but melts in your mouth.

To make the roll-ups the crusts get trimmed from sandwich bread then the slices are flattened out with a rolling pin. The flattened bread is then rolled with the filling of your choice and cooked in a buttery skillet just like regular french toast.

A generous dusting of cinnamon sugar, one of the best things on earth, finishes them and you can dunk them in maple syrup or eat them as is. They’re also good eaten at room temperature.

The filling consists of anything your little heart desires! I used peanut butter & jelly, cream cheese & jelly, plain peanut butter and plain cream cheese.

You can use a nut butter, nutella, marshmallow fluff, dulce de leche, cajeta and/or whatever else you can think of! There are no rules and the recipe is really more method than precision.

They remind me of those french toast sticks that were all the rage a while back. Only more special.

A lot more special.

Chicken Tortilla Soup

Easy and Healthy Chicken Tortilla Soup

The easiest, healthiest and tastiest recipe for Chicken Tortilla Soup guaranteed. Seriously, try it.

Easy Veggie Biriyani

This tasty dish is faster than a take away

Roasted chilli frittata

This frittata is a meal in itself. You can make it with a mixture of chillies and a pepper, or if you're like me, try it with double the chillies. Serve it up with ham, prosciutto or bacon for a damn fine breakfast that will set you up for the day.

Sinfully Easy Chocolate Croissant Recipe

These mini croissants are sinfully easy to make. We use a store-bought puff pastry sheet instead of making our own croissant dough at home. The puff pastry sheet needs to be thawed before using. So, either place into the refrigerator and leave overnight or remove and thaw at room temperature for 40 to 50 minutes. Once the puff pastry has thawed, all you need is 30 minutes to make the croissants. Leave them plain, add chocolate or another favorite filling. These are mini croissants, so when making, assume each person will eat two.

Mushroom, Leek, and Red Pepper Chicken Soup

Beyond the obvious nourishing qualities of homemade chicken stock, this soup offers the additional benefit of killer flavors, from the sautéed vegetables to the rich broth. Topped by sprouts, it’s a cure for anything that ails you.

Cheesy Smoked Fish Bake

This Cheesy Smoked Fish Bake is a super midweek meal and so simple to prepare. Raw chunks of smoked hake/haddock covered in a luscious cheese sauce and baked until golden and bubbling. I serve this with an asparagus and watercress salad dressed with lemon. Some garlic bread on the side is a must to mop up the sauce…

Roasted Tomato, Herb & Chevin Couscous

Fluffy wholewheat couscous with slow roasted tomatoes, fresh herbs and chevin. Such a simple combination yet packed with flavour. Couscous can be a seriously boring ingredient so it’s important to jazz it up.  This salad in particular is a delicious addition to a braai. Gorgeous with lamb chops! But can also stand firmly on its own as a meat free meal.  Add a few chickpeas for extra protein and you’re good to go. This salad can keep in the fridge for up to 4 days! Make extra for your lunchbox.

Rugby Wraps Part 2

Staying with the rugby wraps theme, here’s another alternative as food if friends come over to watch the’s filling but light, reasonably healthy and quick to make. And it’s a nice change from another braai...

Rugby Wraps

Rugby and braai go together like, well, Simon & Garfunkel, but if you had to braai for every Superugby match, you’d be spending half your life in front of a fire, so here’s an alternative. Filling but light, reasonably healthy and quick to make.

Fajita Braai Style

With this meal, you can share the work load. The braai master can handle the meaty part of dinner, while the kitchen queen can take care of the rest. Everyone else can then help themselves in dishing up. Almost like an activity meal.

Creamy Chorizo Pasta

This recipe is a quick, easy and super delicious weekday meal. As is, it will easily serve a family of four. Remember that Chorizo is a spicy sausage. Just because you can’t handle the heat, it doesn’t mean you have to get out of the kitchen. Simply swap the Chorizo for Bacon and you’re just as good to go.

Cracked Pepper Steak with grilled tomato and pesto , steamed broccoli and mixed greens

I am trying to follow the South Beach diet eating programme so I thought I'd share something from it. Whether you're on an eating plan or not I'm sure most people will enjoy this !

Homemade baked Falafel wraps

The condiments and extra toppings—tomatoes, cucumber, lettuce, olives—can often transform an average sandwich into something extraordinary. For a supercharged sandwich try adding a flavorful ingredient like pesto, roasted red peppers, avocado, or pear.

In our Baked Falafel Sandwiches with Yogurt-Tahini Sauce, our condiment of choice makes all the difference. It’s worth the effort to seek out thick, rich, creamy Greek yogurt. Make the sauce up to three days in advance and the falafel mixture up to one day ahead; bake the falafel patties just before you serve the.

Crispy Pork Belly, Nutty Roast Pumpkin & Green Beans

When pork belly is made right, it doesn’t need tons of seasoning.  The flavour of the pork will be enhanced by the liquid it’s roasted in and the crackling will crisp up to perfection.

I used pork belly with the bone in, but you can ask for a deboned piece from your local Food Lover’s Market.

I used white wine (makes a tasty gravy after roasting), but you can use chicken stock (if you like your meat to be saltier) or milk (this makes it more tender).  If using milk, you probably won’t use the liquid afterward.

Basic Chicken Salad

In a country that’s as hot in summer as Namibia, one often feels like a light meal, especially for lunch, and salads are tops as they tend to be cool. This is a very basic chicken salad that, with double the ingredients, can double as a main course too.

Roast veggies Two Ways

Occasionally even I, the great meat eater, gets that guilty feeling about eating too much meat, and then a vegetarian meal or two assuages the conscience...and I have fallen in love with roast vegetables. Here are two options to present them, and can be stand- alone meals or as side dishes to a braai or other meals.

The Cheesy Nut Lasagne

The Cheesy Nut Lasagna

This is your normal lasagna but with twists that work so well on the taste buds everyone should know about it.

Watermelon Keg

I am told that filling the keg with a certain clear adult beverage would make it a perfect cocktail dispenser. Well, there’s plenty of summer left for that experiment!

Making one of these takes 5 minutes. But first, you’ll need a spigot of some sort.

Moroccan-style Roast Chicken

Every person on the planet should know how to make a roast chicken.  It’s simple enough for anyone, and it’s fancy enough to serve to guests.

This recipe is dead easy and absolutely delicious.  Serve it with a broccoli salad or potato & spinach.

Note:  You can add a tbsp of orange juice instead of oil to the basting.

Green Lentil Soup with Curried Brown Butter

This green lentil soup (which can be made with green split peas if you can’t find green lentils) is warm and hearty and absolutely delicious.

Truly the curried brown butter is the most amazing drizzle to hit a soup in the history of ever. The buttery spiciness compliments the creamy, simple soup perfectly. And I don’t know what it is about the combination of coconut and curry but it Although admittedly, the coconut milk in this soup is subtle…yet important.
